Chef’s Choice 120 Diamond Hone 3-Stage Professional Knife Sharpener Review

At first I was skeptical about the Chef’s Choice 120 3-stage Professional Knife Sharpener. It was not I who purchased it but my mom who was not very diligent in maintaining her cutlery properly. It made me think that it was just a worthless space consumer in the kitchen counter, since my mom’s knives were still in bad shape.

However, as I read about cooking including the proper use and maintenance of knives, I kept stumbling upon good reviews about the Chef’s Choice 120. I was so intrigued and curious that maybe my mom was not using it right. So, I read the user’s manual since I have no idea how to properly use the thing.

I gave it the first run on the first groove as directed on the manual. In keeping with the instructions, I kept the proper duration for the length of the knife by looking at a clock while passing it through the groove. I felt the edge for a burr as directed on the manual and I was surprised that I felt one. This gave me the feeling that I am doing it right as the manual says and that I would get the result I expected.

After running it through the other groove as directed, I was very amazed at the results. I got my knife back to its former sharpness. In fact, I think it was even sharper than before. I also realized why my mom was ineffective in using the device. It was all a matter of following the instructions exactly as it was stated in the manual. She was passing one side of the knife through the same groove more than the other instead of alternating the sides for even distribution.

As an added measure, I wash the knives prior to and after the sharpening in order to remove any leftover food or dirt in the knife. This is important if ever I have to run it through the knife sharpener again. This is said to be one of the best practices to do, in order to keep the knife sharpener maintained for best performance. The knife should also be washed after sharpening to remove the metal filings that might have stuck on the knife.

Skeptical as I was at first, I found out that all the reviews I’ve read were right. Now I even recommend it to my friends who are fond of cooking like me.
